50 years ago my father had an idea.
Half a century later I am proud to turn that idea into a reality. As a young man touring europe after the last great war my father was introduced to Pancetta Ultima “The Ultimate Bacon.” But years of agricultural misguidance and political maneuvering had brought the last herd of once wild boars (from which this bacon was made) to the brink of extinction. Then, 10 years ago with the the help of the Italian government, the UJA, and a generous grant from the International Organic Porcine Association, one breeding pair of pigletas sweetus were transferred to our farmstead in the lush Champlain Valley. There, under the watchful eye of master herdsman and curer Leonardo Primo, the pair began to breed.
